Graceland Inn to unveil new Mingo Room menu

Graceland Inn of Davis & Elkins College will unveil its new Mingo Room Restaurant menu Wednesday, re-opening for lunch and dinner under the direction of Executive Chef Tim White. The restaurant, which occupies the entire first floor of the historic mansion, will begin serving at 11:30 a.m.

White comes to Graceland from the four-diamond Boar's Head resort, where he was executive sous chef for the famous Old Mill Room. He graduated from the New England Culinary Institute in Montpelier, Vt., in 2001, after receiving a degree in Food and Beverage Management from Davis & Elkins College. In addition to the Boar's Head, White has served as a chef at Lewisburg's Tavern 1785, Chicago's Spruce restaurant, Boston's Hammersly's Bistro, and Michigan's lakeside Timmerin.

White says the new menu for The Mingo Room will focus on a select list of offerings that will include meat, seafood, vegetarian specialties and local produce. The kitchen will feature fresh eggs from local producer Red Creek Farms plus greens, heirloom tomatoes and other vegetables from nearby Rolling Thunder Farm. Soups will include a "Summer Gazpacho," served during lunch and dinner, as well as White's "Soup of the Day." And dinner entrees will range from filet mignon and New York strip to a grilled salmon, rack of lamb, vegetable risotto, and other selections. Desserts promise to be an event, with vanilla bean creme brule as well as a summer berry crisp and other fresh items.

White says he will update the menu throughout the year, ensuring that customers can enjoy their favorites as well as try new, seasonal fare.
